So, ever since I set my goal to get at least five servings of fruits and vegetables every day, I haven’t really had to overhaul what I eat, but I’ve been more mindful to pick those when given the choice. I make sure to keep fruit around at work for a snack, and I’ve been making sure that my Monday-food is packed with vegetables. Since I was too poor to keep doing WW online, I’ve been using SparkPeople. Along with their nutrition, water and work out trackers, they also have this handy Fruit/Vegetable servings tracker.

This week I made extra vegetarian groundnut stew (aka my favorite food) for Sunday dinner, so I’m off the hook today to do other stuff like.. work, school, meetings, and er… blogging.

A few weeks ago, I asked twitter for some soup ideas, and Tina from Faith, Fitness and Fun replied with this recipe for Tortellini Soup. I made a few changes to make it vegetarian, but I have to say it was really good! I knew I was going to save this soup for later in the week, so I used kale in place of spinach since it is a heartier green. I replaced the chicken broth and sausage with vegetable broth, extra kale, carrots and herbs like rosemary and thyme.

I decided to expand my squash consumption to spaghetti squash for some variety. This one I baked until it was soft.

I scooped out at the spaghetti-ish part of the squash and spread in in the baking pan. I tossed it with tomatoes, onions, garlic, bell pepper, Italian herbs and topped with cheese and 1/4 cup of bread crumbs. I’m not sure how long I baked it, but I left it in until the cheesey-top was browning.

Ok, this is super ugly and I haven't even bothered to write a real recipe. But it tastes good, I promise. You can get your fix for Italian flavors without eating mountains of actual spaghetti.

I really liked both of these make-ahead dishes more than I expected I would, and I will make them again.

And, because I am such a dedicated blogger, and because I walked around the S.C. State Fair telling my friends “I want to eat something WEIRD!” …  I present.. Deep Fried Kool-Aid.

The verdict: Deep Fried Kool-Aid tastes like strawberry pound cake, fried and covered in sugar/Kool Aid dust. I think they must have dipped some other dough into Kool Aid, or made it with Kool Aid.

I ate this so you don’t have to. We all split the order, and although it wasn’t terrible, none of us were hankering for more. The next time you’re at a fair, look for something else weird to eat.

Georgia Wedding Weekend

My friends Leslie and Caleb were married Saturday at Jubilee. They chose this spot for the ceremony and I think it was perfect.

I spent the last few days at Jubilee. I went a few days before my friends Leslie and Caleb’s wedding to hang out with them before they had back up North. Getting to spend time with my friends who live there and those who came from far away for the wedding was perfect. It was really just what I needed after two weeks of work/school/life chaos, and the wedding was beautiful.

I took a million pictures this weekend, so bear with me on this picture-heavy post.

Spending time with the bride before the wedding was one of my favorite times. It was a very peaceful "backstage." I can't believe my little Lesliebo is growing up. Ina and Leslie and I met when we all volunteered there for the first time in Fall 2009. I really feel like they are my sisters, and whenever we come back together it is like we never left.

This was really the only picture I took during the ceremony. There were a million other people taking pictures, and I wanted to just enjoy the moment..but Caleb's face seeing Leslie walk down the aisle was just priceless. After the couple had dinner with their family, we went out to celebrate in Athens. It was a good end to such a special day.

It was really so perfect for them, and I’m glad I got to be there with the during some of the planning and ceremony time. I can be a little cynical sometimes about relationships (haha surprise!), but seeing them together made it impossible to be anything but happy and hopeful. I’m trying not to have the “back to real life blues” and instead stay energized and motivated this week.

I’m the #1 fan of the time change. I realized today that as soon as the sun goes down, I become about 90% less effective and now I have a little extra time to get stuff done! I love having more sunlight. I love longer days. I love love love it.  I’m still feeling a little off, time-wise, and sleepy, but I LOVE the later time so much that I’m going to stop whining.

It dawned on me today that some of my readers are probably wondering where my “healthy living blog”-style posts are. Well, most of them are in my brain, floating around as ideas more than posts. My food lately has been pretty boring: eggs, toast, veggie burgers, salads and things I was smart enough to freeze when I had the energy to cook.

My work outs have been awesome. Even though I’m sleepy, I’ve made a No Nap Rule for this week, which helps me prioritize my activities a little better since my productivity after an evening nap is approx: 0% or even -5% (A negative productivity includes something like… ordering pizza and watching Jersey Shore.)

After tweeting, blogging and facebooking about my “30 Day Shred,” attempt, I was able to get my friend Jordy to come run and shred with me today.

In other news.. this weekend was sooo busy! It was great, but one day I’m going to have to learn how to plan to do nothing. Not anytime in the next two months, but soon!

My other BFF Katie came down Friday night so we could get ready for the Rally for a Moral Budget at the S.C. Statehouse. We laid around on my living room floor working on posters and gossiped about.. ya know, social justice. Actually, I don’t know what we talked about, but I’m sure it was really deep.

I was motivated to go to the rally mostly because S.C. refuses to tax on principle, and those who don’t have much of a voice in government (the sick, the poor, the elderly and kids in public schools) are the ones who are affected the most.  I may not have a lot of power, but I have a voice. And sharpies. I got a really sweet farmer’s tan and got to see a bunch of South Carolinians who care about the same stuff I do, so I mark that a success.

Then.. the day took a turn for the testosterone when I ended up at an amateur boxing match in Florence, with Carlton. It was held at the Weed and Seed, a community center that has an boxing program for young people.

Then we watched “Battle: Los Angeles,” or “The longest recruitment video for the U.S. Marines I’ve ever paid money to watch.” Luckily, Sunday I wrote a paper about tuberculosis and went with my roommate to see the “The King’s Speech” and quickly got my manly levels down to normal.

Happy Presidents Day! My favorite  president is Barack “We Do Big Things” Obama, but Wikipedia tells me the holiday is supposed to be a Washington/Lincoln birthday celebration. Yawn. I’m celebrating my time off from work by reading about malaria for school. Woohoo! Party time!

I spent most of last week running around like a crazy person because my cat Moneen was sick. I’m sure some of you can relate to her struggle: The vet says she needs to lose weight, but she rejected her new diet food. When you reject a diet, you probably just go eat some pizza. When she rejects a diet, she gets sick all over my apartment while I’m at work.

I’ve always just assumed her stomach issues were related to her diva attitude, but it turns out she might have kitty IBS. She’s OK now, but as a crazy cat lady in training, I was slightly freaking out that she might be really sick.

If I'm ever MIA from the blogging world, it is probably because I have 16lbs of love pinning down my hands and taking over my lap.

So after work and school and vets, I was glad to have some wine and dine time with friends.

Thursday, I made this Caramel Pecan Tart from Southern Living to take to dinner with my public health lady friends. It is similar to a pecan pie, except it isn’t quite as thick and it includes honey. I didn’t make my own crust and I used about 1/2 cup less nuts, and I think it turned out well.

Friday night, some high school and college friends came over for lasagna! In honor of my friend Lisa’s birthday, I made and decorated a cake. I may have gone a little crazy with the half-priced Valentine’s M&Ms, but I would like to blame all 341 cake decorating shows on cable for inspiring my low budget attempt.

Yesterday, I ran 3 miles with ZenMama. Probably not far enough to account for all the dessert and wine for this weekend, but far enough to make me feel confident about my 5K this Saturday! Even though I’ve had bad luck with my last two planned races, I’m looking forward to this. Then I can cross that off my list and start working on my 5-miler!

Up and down and up again

I have to start by saying that ever since my post about Christmas expectations was chosen for Freshly Pressed, my blog has been kind of insane – visits! comments! strangers knowing my deepest darkest thoughts! But, overall, it is a good insanity, because I think it has allowed a lot of people to acknowledge that this season doesn’t look like Norman Rockwell for everyone.

That said, to all the new folks who have subscribed or read through, a warning that I’m only serious about 2% of the time. The other 98% is filled with cats, kitchen disasters and whining about grad school.

This past week has been enough to give me emotional whiplash. My sister-in-law’s mom Brenda passed away last week, and yesterday was the funeral. Losing a parent is one of my greatest fears in life, and I can’t imagine what they are going through. One of the things that stood out to me was that Brenda had written out in detail how she wanted her funeral. She knew what she wanted down to the floral arrangements and soloists. I can’t even collect my thoughts enough to make a grocery list.

This week also marked the start of something new for two of my closest friends, Sarah and Jordy. Last week I went with him to pick up the ring, which was a super top secret, of course, and then Saturday he proposed, and we all went out to celebrate.

There is the happy couple. Congrats, guys! Thanks for having your after-engagement at a bar so the rest of us sad unmarrieds could drink our pain away. Just kidding, although a smug married did tell me not to worry because "It will happen" to me one day too. Um, how about graduating? Will that happen because thats what I really need assurance about.

Congrats, guys! Your love will keep you warm when you move to Indiana and have to ride your Snowmobile to class next year. And thanks for having your celebration at a bar so the rest of us sad unmarrieds could drink our pain away. Just kidding!

Also in the last few days, I met Kat and Lily for hummus and then bubble tea, cooked tamales for five hours with Carlton, got my grades back for the semester (A, A, A, B+), caught up with my old friend Lesliebo, found out my plan for summer isn’t going to happen, and saw two horrific accidents on the interstate. (A brief PSA: The three people who died in these wrecks either weren’t wearing a seatbelt or were wearing them improperly. Having survived an interstate crash probably because of my seatbelt and airbags and luck, I feel like this is a good time to remind you to wear your seatbelt even if you think you’re a great driver.)

I can’t wait to just exhale and exist for a few days before life picks up again.

As my past playlists have shown, my music tastes ranges from moderately- intellectual mopey indie to booty booty booty disposable club songs. When things in my life are stressful (like the past week), my brain retreat is music that doesn’t make me think very much, so I don’t have a full playlist this week. Somewhere in the middle of mopey and dance-y, is the music closest to my heart, like this song, from Atmosphere. Ok, so after the disaster that was last week, I spent most of Friday and Saturday doing homework. And eating pizza. But besides THAT, which who would read a blog about doing homework and eating delivery pizza, it was great! Saturday morning I woke up early to walk to campus to watch Jordy kick the Governor’s Cup 8k in the butt!

It was good to get an hour of walking out of the way early Saturday before hunkering down to (nap and then) do school work. After a weird knee pain/popping, I’ve been taking a lot more long walks and less short runs. I don’t want to take myself out of the game before I even start.

A step-by-step guide to a good day

1. Have a break to look forward to -Yesterday was my last day of school and work before fall break! I still have some work to do while I’m off, but it is really nice to have some open-schedule days.

 

2. Find something new and awesome. Or something old and awesome. I’ve tweeted about my search for a good Greek salad. I got spoiled living in Florence, because I could always count on a big Townhouse salad. You’d think it would be pretty easy to put together, but for some reason lots of places just get it wrong. I got one from the No Name Deli in Columbia, S.C., last week and I was really hopeful since they advertise it as the best Greek salad in town.

But meh. The chicken was dark and chewy (Ok, I’m not a huge meat eater, but it seemed like dark meat? I don’t know. Either way, it grossed me out.) and the salad dressing might as well have been a cup of olive oil with a few herbs tossed in. I also went in during the lunch rush, and even though the service was quick and friendly, I felt like I was standing in the way of all the business people crowded in while I was waiting for my to-go order.

BUT! Yesterday, I found a good Greek salad in Columbia. I’ve driven past Pitas on Taylor Street in Columbia a few times, but yesterday I finally decided to give it a try since I was in a rush from class to work and wanted something filling and healthy. I like the atmosphere because it was a very open, casual space with an open kitchen and a selection of Mediterranean foods and fresh baked pitas for sale.

I only waited a few minutes for my order, a Greek salad with a side of tzatziki and pita chips. It was so good, especially the tzatziki. Everything tasted really fresh and the chicken wasn’t gross.

 

Ok, so it might not look like much after being squished on my way to work, but it made me happy.

3. Eat cupcakes. Kat brought vegan chocolate cupcakes over to celebrate Carla passing her boards. Kat, Carla, Lily and I all went to the S.C. State Fair on its $1 opening night, so we met at my apartment first.

Carla also gave us all vegan zucchini pumpkin bread. It is sooo good. Really. I had to slice it and freeze the rest of it so I wouldn’t eat zucchini bread for my next three meals.

 

4. Take a walk. We decided to avoid the traffic by walking. I live about a mile from the fair grounds, and it was nice to get out and move after sitting all day.

5. Re-live childhood memories and hang out with new friends. My family always went to the state fair when I was little, and I don’t think much has really changed since then. It was fun going with the blogger ladies, catching up and gawking at all the food offerings.

(Sarcasm) Dr. Vegetable's state fair prescription was battering and deep-frying a mixture of broccoli, sweet potatoes, pickles and cauliflower. We didn't finish this. It was like, a not-as-good vegetable tempura. But, it was something new!

But, seriously, it is always nice to get together with these girls because they are fun and funny, but also to dish about blogging stuff. We don’t all have the same perspective or opinions, favorite dishes or favorite bloggers, but that makes it more interesting.

I should preface this by saying that I am so super tired today, so if this entry seems slightly less coherent than most, that is probably to blame.

This weekend, some high school friends (and new friends!) and I went to Myrtle Beach for a long weekend. If you’ve ever been there, you know it isn’t the classiest of beach destinations, but it is close by and offers a LOT in the way of people watching. Also, we were all ballin on a budget, so ocean front “luxury” might have been out of our reach. There were times when I looked around and thought,”Sure, there is a sunburned guy with a curly mullet over there yelling at his kids who just barfed in the pool, but we some how fit into this scenery.”

I had a really good time, and even though I wasn’t 100% on a healthy eating/drinking plan, I think I was pretty reserved as far as vacations go. The only meal I regret was at a restaurant that ended up being the worst place EVER. Their buns and bread were bricks, their fries were chunks of soggy, greasy potatoes, and my friend described his chili cheese fries as “like someone dumped a can of chili on a plate. Worst. Meal. Ever. Thanks, Pappy's. I read reviews when I got home to see if anyone else had as bad an experience, and someone said they ate there every day of their vacation. Wow, people.

Otherwise, I ate out more than normal, but nothing too crazy. My one real indulgence was a fruity drink.. an orange creamsicle at an outdoor bar on the boardwalk. I normally don’t like drinking my calories, but this was so good.

I officially started logging my food today, using SparkPeople. My goal is to stay between 1200-1800 calories. I know that is a wide rang, but I think an average of 1500 calories is a moderate goal. Today was still a little wonky since I spent half of it driving, it wasn’t so bad. I know this week will be different from most since I’m moving and since I have a blogger “lady date” on Wednesday (which I am very excited about!), but I can’t put off making changes until life settles down because that might never happen.

Totally worth it. I actually don't know what goes into making a drink like this, and that is probably a good thing. Nobody needs to drink fruity alcohol drinks with whipped cream on a daily basis.

In high school and into college, my friends, especially Katie and I, spent a lot of our free time going to shows and concerts. After we turned 21 and had more weekend and nighttime options, we started doing other things with our time.  Over the last few years, even after moving away and graduating college, we’ve still seen a few shows together and it always reminds me of how much I enjoy live music.

In particular, we’ve traveled hundreds of miles to see some of our favorite acts like Atmosphere and Eyedea & Abilites, who we saw Tuesday night at Cat’s Cradle in Carrboro, Sage Francis, POS, and other hip hop artists. Nobody really ever comes to S.C., which explains all the driving.  

Going to concerts always reminds me of my younger days, but there are some things that are different. Namely, as you can see from the pictures, we were not up at the front of the stage. One of my biggest concert pet peeves is that no matter where I stood, there was always some big, smelly dude who was taller than me who would elbow his way in front. I’m only 5’4, so it doesn’t take a lot to be taller than me. And for future information, big anger comes in small packages.

So, this time, instead of trying to fight through the crowds of sweaty people, we found a higher spot that wasn’t so congested. I guess that is a sign I’m getting older. Which, speaking of, my birthday month begins Saturday. So mark your calendars.

Before the show, Slug from Atmosphere was outside shaking hands with people in line. I thought that was really nice, even though I was very nervous and obviously incapable of not looking like the slow friend. It’s ok though. The upside of liking musicians who don’t exclusively go on tour at massive venues, is that you often have a chance to meet the people you came to see.

My Sun/Mon Weekend pictures

So, I went home this weekend for Father’s Day/my dad’s birthday. I posted before about the donation to Global Giving that I gave in honor of him, but in addition to those things I got him two plants that are supposed to bloom with flowers as big as your head (I saw them in action at the Farmers Market, but I can’t ever remember their names), some whole grain bread from the bakery at the market and some prints of pictures I’ve taken from his garden.

I don’t get to go home often, so when I do I like to try to see everyone. I visited with my Grandma and mom on my way to Fort Mill, and they always make me happy. After Sunday dinner with dad, and his birthday dinner Monday, I went to see Katie who was dog sitting for her parents.
