
No one will notice the pile of torn and ripped tortillas you went through trying to roll these if you serve them with a big, creepy smile.
I was so excited when Rachel posted a new Project Tasteless contest.. this time: Man Cave Food just in time for the Super Bowl! My first thoughts went straight to meaty and deep fried, but I wanted to challenge myself to make something a guy would like, that would also be healthy enough that I couldn’t be accused of trying to slowly murder the men in my life with artery clogging snacks.
I like football, but I’m not great at picking out football food, as was illustrated when I brought kale chips to a Sunday afternoon gathering. So, instead of going the traditional man food route, I chose my dish by color and worked from there. In honor of Eunice, I decided to go with the Steelers, and make baked Black and Yellow Chicken Taquitos!
Black and Yellow Touchdown Taquitos
Makes about 36
Ingredients
1 package of chicken breast
1 can of black beans, or about 1.5 cups
1 cup corn off the cob
1 cup chopped onion
1 chopped yellow pepper, seeded
1 tbs garlic, chopped
36 small corn tortillas
1 tsp cayenne pepper (use half for less spice)
1 tsp cumin
1 tsp salt and pepper mix or Mexican seasoning mix
1 Tbs Olive oil (Plus more for coating)
Serve with salsa, sour cream or guacamole
Directions
1. Preheat oven to 375*. Chop chicken and cook it in a large sauté pan until it is done all the way through. Keep stirring and pulling apart for smaller pieces.
2. Add onions, peppers, garlic, 1 Tbs olive oil, cumin, cayenne and seasoning mix and cook until onions are translucent.
3. Add corn, black beans and cheese and stir until they are all warm.
4. Heat a griddle or an empty sauté pan over medium heat. Place corn tortillas on hot surface for about 10 seconds so that they are pliable.
5. Scoop a spoonful of the chicken mix into the tortillas and roll quickly. Place the rolls seam side down on a non-stick baking dish coated in olive oil. Repeat until all the mixture is used.
6. Brush a thin coat of olive oil on rolls and bake for about 15 minutes, or until the taquitos are crispy and don’t unroll.
7. Serve with salsa, sour cream or guacamole.

Some recipes I saw used toothpicks, but those might be more helpful if you are deep frying. They weren't necessary when the rolls are placed with their seams down.
Rolling takes a little practice, and you can see from my dish that my first few attempts were the ones you serve dudes who already love you rather than dudes you`re trying to impress.
Also, you could easily add some green to these by substituting green peppers for yellow if you`re pulling for Green Bay. If you are feeling brave enough to try to bribe your way into the man cave with a vegetarian option, skip the chicken and add extra beans and corn.

This looks really tasty! I wonder if I could use tofu instead of chicken?? Humm…I may have to give that a try!
I don’t think I have every tried a taquito, but I am totally going to serve these up on Sunday. The boys will not even know what is about to hit them.
