So, last night I wanted something sweet but also healthy.. so I ate oatmeal the only way I get excited about it… cookies! Actually, I’m not sure you could call these cookies, since they aren’t super sweet. They are a healthy snack in a cookie costume. You could dress these up with nuts, more raisins or brown sugar, but I liked them just like this. They were really filling.

Molasses Oatmeal Bites

Makes 12

Ingredients

1 1/4 cups rolled oats
1 tsp baking powder
1/8 tsp table salt
1 large egg, beaten
1/2 tsp vanilla extract
1/2 cup molasses
1/4 cups all-purpose flour
1/4 cup raisins
1 banana, mashed

Directions

Pre-heat oven to 350* and line baking sheet with parchment paper.

Mix banana, molasses and egg together in one bowl and the dry ingredients in another.

Stir wet ingredients into dry ingredients until there is an even consistency throughout.

Spoon about one tablespoon of the mix onto the parchment paper. They shouldn’t spread much during baking, but leave some room on each side.

Cook for about 10 to 12 minutes, or until they are solid. You may have to test them with a spatula to see if the bottoms are cooked, since the tops will stay shiny.
