I’m willing to stand by fun Friday even though today started with a dead car battery, then work, and after I write this entry I’ll be waiting on the AAA guy and doing massive amounts of homework. I’m hanging on to my FF attitude. So, in celebration, I bring you Fun Friday Mini Funnel Cakes, because ‘Meh’ Thursday Funnel Cakes just don’t have the same ring.

I’d been planning all week to split my time Saturday between bff Jordy’s birthday/football watching party and my roommate’s girls’ night spiced-wine drinking party. But, much to my surprise, even though I had it in my mind (and calendar) that her party was Saturday, it was actually Wednesday. I had gone to eat a sad salad by myself for dinner, and when I came home there were tons of people at my apartment eating festive fall foods without me.

Where is my mind? No, seriously. Please tell me if you find it because grad school is really hard without it.

Anyway, along with spinach dip, cider, mulled wine and baked apples, my roommate Evelyn made Funnel Cakes! But, because we didn’t have a funnel and because eating a whole funnel cake on a Wednesday night WITH wine seems slightly overindulgent even for us, she made little funnel cakes.

Fun Friday Mini-Funnel Cakes

(This recipe was taken from Cooks.com, although I can’t find the specific link at the moment. It makes 8 5-inch cakes or about 16 mini cakes.)

Ingredients
1 1/4 c. all-purpose flour
1 tsp. baking soda
3/4 tsp. baking powder
1/4 tsp. salt
1 beaten egg
2 Tbs. sugar
3/4 c. milk
Vegetable oil for frying
Powdered sugar for topping

Directions
1. Mix flour, baking soda, baking powder, salt, sugar, egg and milk in a bowl until the batter doesn’t have anymore lumps.
2. Heat at least 1/4 inch of oil in skillet.
3. Ladle in batter making sure to move the ladle as your pouring to make it more flat than round.
4. After about a minute, flip the cake and cook for another minute until both sides are golden brown.
5. Drain on paper towels and let cool. Sift powdered sugar on top and serve.

  1. I had a love affair with a funnel cake last night. ‘Twas amazing. I’ve never been brave enough to try a recipe myself – might just put this one to use!
